Thai Chef Maps Five Regions on One Colorado Springs Menu
COLORADO SPRINGS, Colorado – August 11, 2026 – Nakhon Luang Thai Kitchen, a chef-owned restaurant in northwest Colorado Springs, is using its menu to draw a line most Thai-American restaurants leave blank: the difference between Bangkok, Isan, Northern Thai, Southern Thai and Lao cooking.
Regional Thai cuisine is not a single style. Northern Thailand leans on curry pastes thinned with coconut milk and served over egg noodles. Isan, the northeastern plateau bordering Laos, builds flavor from lime, fish sauce, chilies and toasted rice powder, and eats with sticky rice rather than jasmine. Southern Thai cooking runs sharper and sweeter, with pineapple, ginger and tamarind. Bangkok is where those threads meet, and where many of the stir-fries and noodle dishes familiar to American diners took their standard form.
“A guest can taste the map if the kitchen lets them,” said Toui Phommalath, chef and co-owner of Nakhon Luang Thai Kitchen, who has cooked professionally for nearly 20 years, including in fine dining. “That is why the menu keeps the regions distinct instead of blending everything into one house flavor.”
The distinctions are traceable dish by dish. Khao soi, the Northern curry noodle soup, appears twice, once as Chiang Mai Khao Soi and once as Royal Duck Khao Soi, both served with soft and crispy egg noodles, pickled mustard greens and green onion. Isan and Lao cooking account for larb with toasted rice powder, green papaya salad and Nam Tok beef salad marinated in tamarind and lime, with sticky rice available as a side. Southern Thailand shows up in Phuket Fish, breaded tilapia in a sweet and sour sauce with pineapple and fresh ginger. Bangkok-style street cooking fills the stir-fry and noodle sections, including Pad Gra Pao with egg and Pad Pong Ka Rhee Seafood, a curry powder stir-fry of shrimp, scallops and mussels.
Aromatics do much of the regional work. Tom kha and tom yum are built on lemongrass, galangal and kaffir lime leaves rather than dried spice. Red Curry with Roasted Duck is built on carrots, bell peppers, kabocha squash and basil, a vegetable set that leans on squash rather than the bamboo shoots most red curries default to. Larb and Nam Tok both rely on toasted rice powder, which gives Isan salads their texture and nutty finish.
The restaurant’s name records the same geography. Nakhon Luang draws on the ceremonial roots of Bangkok and the Lao term for a royal or central city, and Phommalath, who is from Laos, built the menu around Bangkok-born influences. That crossing is deliberate rather than decorative, and it explains why Lao dishes sit beside central Thai standards instead of being folded into them.
The bar follows the same reasoning. Nine cocktails are built on house-made syrups drawn from Thai pantry ingredients, including a Tamarind Old Fashioned with cardamom bitters, a Bangkok Gin and Tonic with lemongrass ginger syrup and a Thai Margarita finished with Thai basil and pineapple juice.
For guests who have only ordered from the familiar end of a Thai menu, spice level is the practical entry point. Every dish is prepared to a requested level, tofu substitutes as a protein across most sections, and a three-item kids menu covers Pad See Ew, Pad Thai and fried rice.
“Most people have had Pad Thai, and it is worth having,” said Lilly Boonyapapong, co-owner. “What we want is for a guest to order it once, then come back for a region of Thailand they have never eaten from.”
